A wonderful homemade tomato sauce packed full of vitamin and goodness!

Ingredients
- 1 cup of sundried tomatoes (see recipe)
- 2 fresh dates pitted
- 1 tablespoon apple cider vinegar
- ¼ teaspoon sea salt
- 3 tablespoons of grated carrot
- 2 tablespoons raw grated beetroot
- 1 teaspoon dried or fresh finely chopped basil or oregano
- ½ clove of garlic (optional)
Instructions
- So simple – put all the ingredients in a little blender and blend until smooth. If you find it is a little dry add a little olive oil or use some of the oil/liquid from the sundried tomatoes.
- Scoop this into a sterilised jar and store in the fridge for about 2 weeks – if it lasts that long! It is delicious!
