a moist light chocolate cake made with healthy sweet potato and topped with fudge icing.

Cake
- 250g sweet potato, peeled and cut into chunks
- 100g chocolate, I used 70%
- 125g salted butter
- 150g light brown sugar
- 2 medium eggs
- 175g gluten free flour ( South Africa - I used the gluten free flour from Woolworths)
- 3 teaspoons baking powder
- 1 teaspoon xanthan gum
Icing
- 200g chocolate - 70%
- 35g butter
- 2 tablespoons golden syrup
Instructions
- Melt the chocolate in the microwave or over a saucepan. Boil the sweet potato until tender and then mash until smooth. Stir in the melted chocolate. Set this aside.
- Beat the butter and sugar until pale in color, beat in the eggs one at a time. The batter should be nice and light. Add the flour, baking powder and xanthan gum. Mix till smooth. Stir in the sweet potato till well combined.
- Tip this into a prepared tin, either a 23cm round cake tin or a 1lt loaf tin.
- The loaf tin will take longer to cook then the round tin, but you are looking at a time of about 25-30 minutes.
- For the icing: Melt the chocolate, butter and the golden syrup, stirring all the time, set this aside to cool. As it cools it will thicken. When you are happy with the thickness - not too runny and not too thick, spread it on the cake. Decorate the cake as desired.
